Coffee Machines
It is critical to properly harmonize the grind of the coffees you will be brewing to the type of coffee machines that are being used. The goal is simply to release the most flavour out of the ground coffee beans when they are exposed to hot water. The conventional wisdom is that the shorter the time the coffee is in contact with the hot water, the finer the grind should be. Coffee grinders are normally operated at a choice of fine, medium or coarse depending on the coffee machines. The finer grinds don’t need to be in contact with water for as long as the coarser grinds. A coarsely ground coffee should be used in the plunger and the drip coffee filter methods. The espresso brewing method has the fastest brewing time and requires the grind to be very fine. Everyone who has tried to use an espresso grind in their drip filter coffee machines, has always found that the water takes much too long to filter through, without any improvement in the flavour. To make a stronger or weaker coffee the easiest method is to just use more or less coffee rather than to try to use the incorrect grind. It is also important to remember that regardless of the coffee machines being employed, grinding the coffee just before brewing will make a very noticeable difference in the flavour of the coffee. Ground coffee only stays fresh for a few days and deteriorates quickly due to oxidation and moisture in the air.
